Ingredients
- ΒΌ pint Fresh orange juice
- 4 oz Butter/Margarine (unsalted)
- 1 Large egg, beaten
- 7 oz Self-raising flour
- 5 oz Caster sugar
- 3Β½ Tablespoons Icing sugar
- Β½ Heaped tablespoon Cocoa Powder (optional)
- 3-5 Tablespoons Fresh orange juice

Description
Makes 24 cakes. A mosit cupcake with a hint of orange and a rich chocolate-orange icing. Adapted from a recipe I found online and tested for my boyfriend who is a baking novice :)

For the Cake:
1) Preheat the oven to gas mark 3 (160 degrees celcius) and fill a 12 hole cupcake pan with paper cases.
2) Melt the margarine in a medium sized saucepan over a low heat. When it has just melted, turn off the heat and stir in the sugar and orange juice until well combined.
3) Add the beaten egg and sift in the flour and beat the mixture well.
4) Spoon into paper cases. I reccommend half-filling the cases as it makes for a nicely-sized cupcake.
5) Put in the middle of the oven and bake for 30 minutes, or until the cake presses back against your finger and when a toothpick is inserted it comes out clean.
Leave to cool.
For the Icing
1) Mix the icing sugar and cocoa powder in a bowl.
2) Add small amounts of orange juice and mix until the mixture is not too stiff, but not too runny.
3) Ice cakes immediately and decorate if you want to.
