Description

This is an easy 'samosa' type snack. Good with salads, as a starter, or as asmash-n-grab from the fridge.

    Take 10 sheets of Filo and lay to one side in greaseproof paper and cover with a damp towel.
    To prepare the filling, heat the butter in a frying pan and fry the Onions and Mushrooms until softened. Reduce the heat and add the extra Butter. When the butter is melted stir in the Curry and Flour. Cook for 1-2 minutes on a medium heat, stirring continuously. Add the Milk, still stirring continuously until the mixture begins to boil and thicken. Set to one side and allow the mix to cool.
    Preheat the oven to 190c. Brush a sheet of Filo with butter. Next, cut the sheet into half. Fold each half in half again. Brush your pastry squares with butter once more. Place a tablespoon of filing onto each square. Fold each filo square, corner to corner, pressing the edges together firmly. Place onto a baking tray and bake for 20-25 minutes, until golden brown, crisp and puffed. Enjoy!
