    Chop up all the vegetables. Preheat the oven to a moderately high temperature and heat the oil in a baking tray. Once heated add the vegetables and move them around so the oil is spread evenly. Sprinkle with fresh rosemary. Time to cook varies between 25 and 35 minutes so check vegetables regularly. When almost done, prepare cous cous according to packet instructions. Dry fry some pine nuts until just starting to brown and set aside. Remove the vegetables on the oven and mix them with the cous cous in a large salad bowl. Add pine nuts and feta cheese. Serve warm.

Chef's Tips

Flavoured cous cous tastes good with this recipe. You can buy packets with seasoning already added or separate cous cous seasoning. Mediterranean seasoning works best with the roasted veg.

Delicious-looking recipe: healthy too. Yes, cous cous can be rather bland. I like to flavour mine myself, with a coriander, olive oil, lemon and also peppers and red onions.
