In a large fryer or saucepan cook gently the minced turkey till almost cooked ..dont add any oil or butter
When almost cooked add the tomatoe puree and vegtable stock cube with water
Now add the diced swede, finley diced carott, diced green beans, half the red onion finely chopped and tiny florette of brocolli
Now add the mixed herbs to taste
Let this simmer til the swede and carotts are cooked through
You can now boil up potatoes ready to top your shepards pie
Once boiled drain and add back to the pan you boiled them in and then mash
Place your shepards pie mix in a large Pirex Dish and then spoon the mash on top
Slice the other half of the onion into rings ..place those on top instead of cheese and grill or oven bake till golden and onions are nice and soft, make sure they are fine rings though or you could use finely sliced tomatoes :-) hope you enjoy! less calories and plenty of veg included x x
