Description

My Bubu (grandmother) has been cooking this dish for us since we could shove it in our mouths, it is great in the winter period as it really warms you up!

Method

    1. Heat olive oil in fry pan. add chicken peices little by little so chicken doesn't "stew". once browned remove and set aside.

    2. Heat a stock pot on medium heat. once hot place chiken and onion in pot and stir. once onion is soft start to add curry powder slowly until you are happy with its fragrant smell, if you like the curry taste alot then you will want to smell a very curry fragrance from the pot if not that keen then you would want to have a less fragrant smell.
    (Generally if you like it mild buy a mild curry powder, if you like it hot you can buy a hot curry powder and add your favourite chilli sauce like most of my family does)

    3. Stir mixture well until all ingredients are combined. Add potatoes and water, but make sure than water covers most of the ingredients. Stir until combined.

    4. Cover pot and simmer until potatoes are cooked. Add coconut cream before serving.

    5. Serve on a bed of rice accompanied with Roti.

Chef's Tips

Serve with rice and roti found at the supermarket, generally in either the bread isle or in most cases in the isle where you can buy Indian recipe bases. You can also add a couple of teaspoons of either Garam masala or chilli powder depending on how spicy you want it!
