Method

    1. Preheat the oven to 180 C.

    2. Brush cake dish with vegetable oil, or use non-stick dish.

    3. Pour boiling water into a measuring jug.

    4. Cut dates into thirds with knife or scissors and add to water. Set aside.

    5. Chop nuts in a food processor.W

    6. hisk butter and sugar until thoroughly mixed.

    7. Add one egg at a time,whisking until smooth.

    8. Into a small bowl, sieve flour, baking powder,bicarbonate of soda and nutmegor cinnamon.

    9. Add the flour mixture, chopped nuts, dates and water to the butter, sugarand egg mixture and mix gently. The batter will be thin.

    10. Pour into dish. Bake for 25 mins, until rich golden brown.

    11. Place all sauce ingredients into a saucepan and stir over medium heat untilevenly mixed.

    12. Drizzle the warm sauce over portions of pudding, as desiredand serve with Vanilla ice cream.
