1. Heat the butter in a large pan and cook the onion and garlic for 5 minutes until softened. Add the potato, stock and thyme, bring to the boil and simmer for 20 minutes.
2. Remove any thicker stems and then add the watercress (reserving a few sprigs for garnishing) to the soup. Cook for 2 minutes until the watercress has wilted, then whizz until smooth using a hand blender.
3. Serve with a good dollop of yogurt and a sprig of watercress
