Ingredients
- 2 tbsp sunflower oil
- 1 onion chopped
- 2 cloves garlic crushed
- 700g butternut squash deseeded peeled and cubed
- 2 tbsp Masala mix
- 1 tsp Cumin seeds
- 1 tsp Ground Coriander
- 70 g sultanas
- 600ml vegetable stock
- 1 savoy cabbage. shredded
- 2 Red Chillies. Finely Chopped
- 50g Block coconut, chopped

1. Heat the oil in a large pan and cook the onion, garlic and squash for 5 minutes until the onion begins to soften. Stir in the Masala mix, cumin seeds, coriander and sultanas.
2. Pour the stock over and bring to the boil, cover and cook for 10 minutes.
3. Add the cabbage and chillies and cook for a further 10 minutes.
4. Scatter the coconut over and cook, stirring until it dissolves. Serve as a side dish or with freshly cooked rice as a main course.
