Description

This is the best red cabbage recipe I have ever tasted! It is perfect for accompanying roast goose and duck. Its also great with ham, pork and with bangers and mash.

    Cut the cabbage into quarters, remove the thick stalk and core. Slice it up quite finely. Peel, core and chop the apples. Peel and chop the onion finely. Heat the oil and butter in a large heavy bottomed pan, and fry the onions in this for 5 minutes. Add the apple and cabbage, toss to coat with the butter. Add the spices. Season generously, stir in the vinegar and the apple juice. Then add the brown sugar and stir until dissolved. Cover and cook slowly on the top of the oven for 25 mins. Check for liquid and if it is too dry add another tablespoon or so of apple juice or water. Cook for another 25 to 35 mins. Fantastic with cooked smoked ham, sausages, duck, pork dishes and goose.

Chef's Tips

It keeps well in the fridge for a day or so, and you can freeze it successfully. A good way to use up extra red cabbage in the veg box!
