- 2 Onions
- 25g Butter
- 6 dried apricots chopped
- 25g walnuts chopped
- 50g wholemeal bread
- 1 tsp dried thyme
- 25g mature cheddar cheese. grated

1. Preheat oven to 200oC. Peel the onions, cut the tops off and scoop out the centres to make a well. Place in a pan of boiling water so they are covered. Simmer for about 15 minutes until softened. Drain. Stand the onion shells up on a baking tray.
2. Finely chip the onion that you removed from the centres. Melt butter and cook the chopped onion until softened. Add the apricots and walnuts. Finely crumb bread in a food processor, add the thyme and cheese and mix. Stir the bread mixture into the onion mixture.
3. Spoon the mixture into the onion shells. Place in the oven for 15-20 minutes until cooked through and the stuffing is golden.
