Ingredients
- 800 g Lean Minced Beef
- 1 large onion. finely chopped
- 3 Cloves garlic. crushed
- 200 g Carrots Grated
- 3 stalks of celery. thinly sliced
- 1 Red pepper finely diced
- 1 green pepper, finely diced
- 1-2 tbsp chilli powder
- 1 tbsp Ground Coriander
- 1 tsp cumin - ground
- 1 tsp italian dried mixed herbs
- 3 tbsp tomato puree
- 800 g can chopped tomatoes
- 400 g can red kidney beans washed and drained
- 500 ml beef stock
- 15 g plain chocolate (70%), grated
- salt and freshly ground black pepper
- Garnish:
- Cheddar Cheese . grated
- soured cream
- avocado peeled and cubed
- fresh parsley. chopped

1. Heat a large pan and fry the mince for 10 minutes, stirring, until evenly browned. Drain any excess fat then add the onion, garlic, carrots, celery, peppers, chilli powder, coriander, cumin and mixed herbs. Stir well and cook for 2 minutes.
2. Add the puree, tomatoes, kidney beans and stock and season well. Stir and bring to the boil before reducing the heat and cooking, covered, for 1 hour.
3. Remove the lid, raise the heat and add the chocolate. Cook, bubbling, for 20-25 minutes to reduce excess liquid.
4.Serve with rice and garnishes.
