Description
This is a great dish for breakfast, brunch or lunch. Easy & quick to make. You can substitute the ingrediants to include whatever suits you best.

1. Preheat over to Gas 5. Heat the oil in an overproof frying pan e.g copper pan or cast iron pan on a medium heat. Add pepper and fry for 3 or minutes until started to soften. Add the tomatoes and cook for few more minutes.
2. Mix the herbs, salt & pepper into the beaten eggs and mix well. Pour the eggs into the pan over the peppers and tomatoes.
3. Place the goats cheese on the top of the pan. Cook for approx 5 minutes until the bottom of the frittata looks to be firm.
4. Place the pan on the top shelf of the oven and bake for approx 15 minutes until the top of the frittata is nicley browned.
5. Remove from oven and cut into quarters. Serve with toasted bread.
