Method

    First, make the pastry:

    1) To make the pastry, put the flour, salt and butter in a food processor and process with the pastry blade unitl the mixture resembles fine breadcrumbs. Add the egg yolk mixed with a bit of cold water a little a the time, continuing to blend. Just add enough to amke the pastry come tgether in a ball. Wrap in cling-film and refrigerate for half an hour.

    2) Roll the pastry out on a floured surface and cut it into shapes to fit 8 tartlets tins. Also cut out some 'lids'. Prick the bottoms of the tartlets and chill for 20 minutes. Fill the tartlets with a few dried beans so that they can bake blind. Put the lids on a baking sheet and cook both cases and lids in an oven.

    Then make the filling:

    3) To make the filling, saute the mushrooms and garlic in butter over a low heat for 20 minutes. Sprinkle on salt to taste, add the white wine, bring to the boil and reduce until there is barely any liquidi left. Add the cream and prawns and continue to cook for 3 minutes, stirring occasionally. Remove from the heat.

    4) Remove the pastry shells from their tins. Scoop the mixture into them and top with grated cheese. Place under grill for 2 minutes, until the cheese is golden. Serve immediatly.
