The Baron de Ley winery was founded by a prestigious group of Rioja professionals in 1985. Preheat your oven to 180ยฐC.

In a large frying pan, melt 30g of butter over medium heat and add 400g of chopped mushrooms. Sautรฉ until they release their moisture and are golden brown, about 10 minutes.

Stir in 2 minced garlic cloves and cook for another minute until fragrant.

Sprinkle in 1 tbsp of flour and mix well to coat the mushrooms.

Gradually pour in 250ml of vegetable broth, stirring constantly until the mixture thickens.

Add 100g of cheddar cheese and 100ml of cream, stirring until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.

Transfer the mushroom mixture into a greased baking dish.

In a bowl, mix 100g of breadcrumbs, 50g of grated Parmesan cheese, 2 tbsp of chopped fresh parsley, and 40g of melted butter until well combined.

Spread the crumb mixture evenly over the mushroom filling.

Bake in the preheated oven for 20 minutes or until the topping is golden brown and crispy.
