Ingredients
- 185g (6ยฝ oz) Couscous
- 2 cups (450mL/16 fl oz) Boiling water
- 1 TBSP Olive oil
- 1 TBSP Balsamic vinegar
- Freshly ground black pepper
- 1 Cucumber, sliced
- 1 Green pepper, chopped
- 3 Plum (egg or Italian) tomatoes, chopped
- 12 Sun-dried tomatoes, sliced
- 55g (2 oz) Marinated artichokes, drained and sliced
- 55g (2 oz) Pitted black olives, sliced
- 185g (6ยฝ oz) Cooked prawns, shelled and deveined
- 115g (4oz) Feta cheese, cut in small cubes (2cm)
- 2 TBSPS Chopped fresh basil or
- 2 Teaspoons Dried basil
- 2 teaspoons Finely grated lime or lemon rind

1) Place couscous in a bowl, pour over boiling water and toss with a fork until couscous absord all the liquid. Add oil, vinegar and black pepper to taste and toss to combine. Set aside.
2) Place cucumber, green pepper, fresh and dried tomatoes, artichokes, olives, prawns, feta cheese, basil and lime or lemon rind in a salad bowl and toss to combine. Add couscous mixture and toss.
