Ingredients
- 1/3 cup Coarse Boulgur
- ยฝ cup whole wheat
- 2 Carrots Peeled and Chopped
- 1 large Potato
- 1 onion chopped
- 1 chicken leg
- to taste salt and pepper
- corriander finely chopped
- 4 tbsp Tomatoe paste
- 1 lime juice

Iranian Soup based on whole grain - this is like a meal in itself

1. Wash the wheat and boulgur until the water runs clear.
2. Fill a large pot with cold water and add the grain and boulgur and then bring to the boil. Put the lid on halfway.
3. Leave for 1 hour and then add the chicken, onion, carrots and potato. Then add some salt to taste.
4. Leave for a further hour (still so the grain is bubbling)then add tomatoe paste and add chopped corriander.
5. Leave on a low heat for another hour and keep adding boiling water 1/2 cup at a time.
6. After 4 hours the grain absorbs the water and the consistency is quite thick (you can still pour from a spoon but not too runny)
7. Add fresh lime juice from 1 lime to the soup before you serve.
Chef's Tips
1. We add pepper but only after we have served the kids first.
2. Serve with french bread to dip
