Ingredients
- 500mL (17ยฝfl oz) Coconut milk
- 1 Teaspoon Shrimp paste
- 2 TBSPS Thai Green Curry Paste
- 1 Stalk fresh lemon grass, finely chopped or
- ยฝ Teaspoon Dried lemon grass, soaked in hot water until soft
- 2 Fresh green chillies, chopped
- 1 TBSP Ground cumin
- 1 TBSP Ground coriander
- 500g (1lb) Uncooked king prawns, shelled and deveined
- 3 Cucumbers, halved and sliced
- 115g (4oz) Canned bamboo shoots, drained
- 1 TBSP Tamarind concentrate, dissolved in 3 TBSPS hot water

1) Place coconut milk, shrimp paste, curry paste, lemon grass, chillies, cumin and coriander in a wok and bring to simmering over a medium heat. Simmer, stirring occasionally, for 10 minutes.
2) Stir prawns, cucumbers, bamboo shoots and tamarind mixture into coconut milk mixture and cook, stirring occasionally, for 10 minutes or until prawns are cooked (turned pink).
