Description
A cheap and easy meal. One of my favourite baked beans-inspired recipes that the kids love.

1. Heat two tbsp of virgin olive oil in a saucepan, add a chopped onion and cook until soft. Add a tsp of chilli flakes/powder and cook for about a minute.
2. Cut a potato into small chunks and slice the carrot and add.
3. Stir in 3/4 of a 400g tin of baked beans (Heinz obviously).
4. Add 300ml of chicken or veg stock and cook over a low heat for 15-20 minutes or so until the potato is nearly tender.
5. Season with salt and pepper and tsp of mustard (optional).
6. Stir and cook for a further five minutes.
7. You can pour into a liquidizer and blend to a smooth puree, although we prefer it more chunky.
9. Serve hot, garnished with the rest of the beans.
10. Can garnish with some grated cheese or diced crispy bacon bits which always go down well.
