Ingredients
- 1 small onion. finely chopped
- 2 garlic cloves. crushed
- 20g sunflower seeds
- 1 tblspn olive oil to fry
- 60g Green Lentils
- 1 tblspn Balsamic Vinegar (optional)
- 1 Vegetable Stock Cube
- to taste Salt and Freshly ground black pepper

1. Boil the green lentils for 10 minutes, drain and rinse before returning them to boil in the vegetable stock for a further 20 minutes. Drain, but do not rinse.
2. Lightly fry the onion, garlic and sunflower seeds in the olive oil for 3-4 minutes before adding the (optional) balsamic vinegar.
3. Add the lentils and stir to allow flavours to mix.
4. Season well (plenty of salt) to taste, before pureeing with a hand-held liquidiser. The sunflower seeds ensure a texture remains.
This yielded 210g which spread equally between two pots (105g each) meant that a serving of 1/4 of a pot provides 52.5 calories and 3g of fat
Chef's Tips
Future experiments might involve pine nuts and or walnuts, as well as non-crushed garlic (and more of it) :-)
