Ingredients
- 1 garlic clove. crushed
- 1 large white onion. finely diced
- 300g skinless. boneless salmon fillets
- 1 lemon (juice only)
- 100g peeled cooked prawns
- 4 largeish potatoes (any that are good for mashing)
- 1 sweet potato
- 1 knob butter
- 2 tbspn creme fraiche
- ยฝ cup milk
- 2 tbspn parmesan. grated
- 2 tbspn cheddar. grated

1. Gently fry garlic and onion in a little butter or oil until softened but not coloured.
2. Put the salmon in a microwave safe dish, squeeze over half the lemon, and grind over some black pepper. Microwave for approximately 1 1/2 minutes.
3. Peel and chop potatoes, then boil until mashable. Drain and mash with butter, creme fraiche, milk & a pinch of salt.
4. Gently flake the salmon, and mix with onions & prawns. Squeeze over remaining lemon juice.
5. Spoon into an ovenproof dish, spread mash over the top and sprinkle generously with cheese.
6. Bake at 190C for about 20 minutes.

Pop under the grill at the end for extra crispy cheese!
