- 1 onion, chopped
- 1 clove garlic, crushed
- 675g (1.5 lbs) pumpkin flesh, cubed
- 450g (1lb) sweet potatoes, peeled and cubed
- 1 tsp fresh ginger, grated
- 2 tsp ground coriander
- 1.5 litres (2.5 pints) vegetable stock
- 1 tbsp olive oil
- Freshly ground black pepper

1. Put the onion, garlic, pumpkin, sweet potato, ginger and ground coriander in a large saucepan.
2. Add the stock and bring to the boil, the reduce the heat and simmer for 25-30 minutes until the vegetables are tender.
3. Add the olive oil. Season with salt and freshly ground black pepper and liquidise in a blender or food processor.
