- 1 20cm cooked pastry case
- 2 tablespoons raspberry jam
- Filling
- 50g St Helen's Farm goats' butter, softened
- 50g caster sugar
- 1 medium sized egg, beaten
- 20ml (2 tablespoons) St Helen's Farm goats' milk
- 75g self raising flour
- 100g white chocolate chips
- 10ml (1 tablespoon) cocoa powder, sieved
- Topping
- 125g St Helen's Farm natural goats' yogurt
- 25-50g plain chocolate, grated (optional)

Description
A deliciously indulgent chocolate fudge tart made using St Helen's Farm goats' milk products.
Method

1. Pre-heat the oven to 180 Β°C/ gas mark 4
2. Transfer pastry case to a baking tray, and spread jam in base.
3. Place all remaining ingredients, except yogurt and plain chocolate, in mixing bowl and beat for 1-2 minutes until well mixed. Spread over the jam layer.
4. Bake for 30 minutes until risen and firm to the touch.
5. Remove from oven and quickly spoon yogurt evenly over sponge surface.
6. Bake for a further 3-4 minutes.
7. Serve warm or cold sprinkled with grated chocolate as a treat, or with fresh raspberries and custard as a dessert.
Chef's Tips
Note: for a healthier alternative, substitute St Helenβs Farm natural goatsβ yogurt with St Helenβs low fat goatsβ yogurt.
Hi St Helen's - thanks for the prompt response - I'm just of to Sainsburys to do the shopping for the weekend and i'll pick up some of your yogurt. I get what you say about the Cow's yogurt so will go for the Goat's. I have my great aunt coming for tea on Sunday and I think this recipe of yours will impress - thanks again.
Hi Donna,You can buy St Helen's Farm goats' yogurt in Sainsbury's, Tesco, Waitrose and order from Ocado. Our low fat goats' yogurt is also available from Waitrose. The recipe tastes much better using goats' dairy due to its delicious mild flavour but if you still can't find any, you can use cows' yogurt - the beauty of goats' dairy products is you can use them as a like-for-like replacement in recipes using dairy products.Enjoy!
Love the look of this Fudge tart - not sure where to get the goats' yogurt though. Can I use normal yogurt instead?
