Asparagus soup is a perfect lunch option.

Method

    1. First cook the Asparagus in a pot of boiling water for 5 minutes and then drain immediately and put in a cold bowl of water to stop further cooking

    2. Cut The Asparagus into large chunks. Place in blender.

    3. Mix up a pint of Chicken stock and pour over the Asparagus (Can use Vegetable stock as an alternative)

    4 Add pepper, and Olive Oil and blend to a smooth consistency

    5. Blend in 1/4 cup creme fraiche. Strain soup through a fine-mesh strainer into large pot. Set aside.

    6. To make lemon creme fraiche:. mix together creme fraiche, lemon zest and lemon juice. Using wire whisk, whip until thickened. Set aside.

Chef's Tips

To serve the soup - heat the soup till near boiling, ladle into individual bowls and top with a tablespoon of the creme fraiche
