Easy soup recipe for leftover chicken. Really great if you haven't got much chicken to go round.

This is an easy lunch for two if you have some leftover chicken. You can put in as much or as little as you have within reason.
Get a saucepan on the go and with a bit of oil or butter cook and maybe even slightly brown your chopped leek. Takes a few moments.
Then tip in the 400m tin of Heinz vegetable soup. Then fill the empty can with water and add that too.
Add the chopped leftover chicken, chopped carrot. A grind of pepper and some pearl barley or pasta.
Let it simmer for half an hour or so, until the pasta or barley is cooked, and you're done.
Delicious, cheap and nutritious. Serve with buttered brown bread.
