Ingredients
- 6 sausages of your choice
- 1 red onion. chopped
- 6 large potatoes
- 1 Leek. chopped
- 2 carrots diced
- a handful green beans diced
- 4 cabbage leaves, finely chopped
- 3 tablespoons butter or margarine
- 1 pint bisto gravy, onion flavour
- 1 glass red wine
- salt and pepper to taste
- rosemary. dried or fresh
- thyme, dried or fresh
- 1 pack ready to roll pastry

The Baron de Ley winery was founded by a prestigious group of Rioja professionals in 1985. They were quite unique in their approach as they modelled the winery on a Medoc chateaux, which was a pioneering move at that time for producers in the Denominacion de Origen Calificada Rioja. This wine is aged in new oak casks for 20 months prior to resting in the bottle for 2 years before release. It has definite claret qualities; the nose is layered with ripe cherry, toasty oak and a touch of cigar box. 1. Roll out the pastry like it says on the packet. Or make your own from scratch if you're not as lazy as me!
2. Cook the sausages in the oven for however long it takes- usually about 30 mins.
3. Peel and chop your potatoes, then boil them for 20 mins.
4. Whilst they are cooking, chop your vegetables.
Fry the onion and leek in olive oil until soft, then add a glass of red wine, the carrots and green beans. Cover with boiling water and allow to boil for 5 minutes before adding the cabbage. Boil for another 4 minutes, then stir in you Bisto powder to thicken the water and create a sauce. Add the herbs, salt and pepper to taste, then take off the heat.
5. Mash your potatoes using just butter, NO milk. This will allow it to keep together better inside the pie. Add salt and pepper to taste.
6. Chop the sausages into bite-size chunks, then add them to the vegetable mix.
7. Spoon the mash into a thick layer at the bottom of an oven-proof dish.
8. Now pour on the sausage and vegetable mix and spread around evenly.
9. Finally, lay the pastry on top. Brush with a beaten egg if desired.
10. Now bake for approximately 45 mins at 200 degrees.
Serve with extra veg and gravy if necessary.
