Ingredients
- 50g butter
- 50g brown demerara sugar
- 2tsp honey
- 1tblsp flour (plain)
- 4 glace cherries - chopped
- 50g candid peel - chopped
- 50g flaked almonds - chopped
- 170g dark chocolate

This was one of Mama Rosa Monster's favourite cookie recipes. I urge anyone to try these...... they'll bring out the cookie monster in you.
Method

1. Heat your oven to 180C.
2. Line 2 or 3 baking trays with some baking paper - depending on how big you want to make your Florentines.
3. Heat the butter, sugar and honey gently in a small pan.
4. When the butter has melted remove the mixture from the heat.
5. Now add the flour, cherries, candied peel and almonds to the pan making sure that you stir them all together well.
6. Now using a teaspoon scoop up generous spoonfuls of the mixture and place each on the prepared baking trays.
7. Now you should bake four Florentines in the oven for about 7 to 8 mins
8. Remove from the oven ands allow to cool for a couple of minutes
9. Now carefully lift each individual Florentine onto a cooling rack and allow them to cool down completely.
10. Put your chocolate in a bowl over a pan of hot water or in a double boiler.
11. Once the chocolate has melted spread over the base of each florentine being careful not to burn your fingers.
12. Make a pretty pattern in the chocolate if you like with a fork or similar and then leave the Florentine, chocolate side up, on the rack to cool fully and for the chocolate to set.
