Method

    1. Sift flour into bowl, rub in butter until mixture resembles breadcrumbs.Stir in grated Cheddar cheese.
    2. Add 2-3 tbsp cold water and mix to form a firm dough.Wrap in cling wrap, chill for 15 minutes.
    3. Roll out on a lightly floured surface and use to line a 9 in loose-bottomed flan tin.Chill for 10 minutes.
    4. Bake blind at mark 5/375F/190C for 10 minutes, then remove baking beans and cook for a further 10 minutes.
    5. Meanwhile, blanch the French beans in boiling water for 2 minutes, add mange tout and cook for further 3 minutes.Drain well.
    6. Spread cooked vegetables and spring onions in pastry case.Beat eggs, single cream, nutmeg and seasoning together.
    Pour into pastry case and cook for a further 35-40 minutes until filling is set and golden brown.
    7. Serve cold, cut in wedges.
