This is a quick and easy to make aromatic omlette bursting with flavour.

Beat the eggs well with the milk, salt and freshly ground pepper.
Add a handful of fresh basil leaves (tear some in half and add some whole.
Add oil to a frying pan and heat to maximum before adding the eggs and basil mixture.
Add the whole cherry tomatoes (the smaller the better).
Flip or fold when the eggs are cooked.
Garnish with one or two fresh basil leaves and serve.
