- 4 Black cod fillets, each weighing 100g (3.ยฝ oz)

- 400g (14oz) light coloured miso paste
- 50ml mirin
- 2-4tbsp sugar

First Make the marinade. Mix the miso, mirin and sugar in a flat-based container with a lid. Submerge the fish in the marinade in a single layer, put the lid on and refrigerate overnight. Do not leave to marinade longer than 24 hours as marinating it for too long will dehydrate the fish and make the taste of the miso too strong.
Preheat the grill to medium and use your hands to wipe off as much of the marinade as possible from the fish. Oil the grill rack, line the grill pan with a piece of foil and grill the fish slowly for 4-6 minutes on each side until cooked through. Watch carefully , as the sugar in the marinade makes the fish burn easily.
lternatively you can place all the fish in a roasting dish and place under the grill, turning once.
