Patatas Bravas
Ingredients
- 600 grm Potatoes cut into 1' cubes
- 3 tbspns olive oil to fry
- 1 x 400grm tin chopped tomatoes
- 1x500grm tomato passata
- 3 red chilli. deseeded and finely chopped
- 4 garlic cloves. crushed
- 1 tspn Smoked Paprika
- 1 pinch Cayenne Pepper (optional)
- salt and freshly ground black pepper to taste

Description
This is my version of the classic Spanish Tapas dish. I only got around to trying it a couple of weeks ago and I can't believe what I've missed
Method

1. Pre heat oven to 225 deg C.
2. Heat olive oil in large roasting tin until hot, add
the potatoes to tin & turn until coated with oil.
3. Place in oven & cook for 10 mins or until they begin to
turn golden .
4. Add the tinned tomatoes & passata , chopped chillies ,
garlic , paprika & cayenne pepper.
5. Mix well & return to oven.
6. Cook until potatoes are soft when pierced with a knife.
7. Check seasoning & serve.
Chef's Tips
1. Use a baking potato such as King Edwards or Maris Piper
to get the best results.
2. Goes well with fish or meat.
