- 9oz Self Raising Flour - Sieved
- 3 lvl tsp Baking Powder
- 1 tsp Lemon Juice
- 4oz Margarine
- 7oz Caster Sugar
- 2 Eggs - medium
- Pinch Salt

Grease and line an 8 inch baking tin.
Pre-heat oven to 160 C (fan oven) or Gas 5.
Cream fat and sugar.
Beat the eggs until light and add to creamed mixture.
Mix mashed bananas and lemon juice together and add to the creamed mixture.
Sift flour, baking powder and salt together and mix quickly into the banana mixture.
Pour into baking tin and level.
Bake for approx 40 minutes (check after 35), until brown and firm in the centre.
Cool on a wire rack.
Once cool, cut into 16 squares. (Can also be baked in cake cases but will only take approx 25 mins to bake. Great for kids' lunchboxes).
Ideal for freezing.
