- 200 gm Butter unsalted
- 200 gm Dark Chocolate (70%)
- 3 eggs
- 300gm granulated sugar
- 2 tsp Vanilla Extract
- 125 gm plain flour
- 1 pinch salt

Preheat oven to 180 deg C / fan 160 deg/ gas 4
Grease and line 20 by 30 cm rectangular baking tin, 3-4 cm deep, with greaseproof paper.
Melt butter and chocolate over a bowl over a pan of simmering water or gently in the microwave.
With a n electric mixer, beat together the eggs, sugar , vanilla extract and salt till lovely thick and creamy.
Mix in the melted chocolate and butter. Finally stir in the flour.
Pour into the baking tin and cook for above 25 mins till top is cracking and centre is just set.
PS: Give the brownie a double chocolate fix by adding 150 gm chopped milk/ white chocolate chunks before baking.
