1. Cook leeks in boiling water
2. Fry mushrooms
3. Add mushrooms to leek saucepan
4. Add chicken stock cube or tinned stock (ideally from roasted chicken) with salt pepper, garlic powder, dried mixed herbs
Chef's Tips
- add cornflour to thicken.
- add chicken (in step 3) based on fry chicken taken from chicken breast.
- add croutons: cut bread into cubes and add to small saucepan, add small amount of oil to frying pan, heat on medium-high. Test if oil is hot enough (i.e. bread sizzles), then tip all in and keep turning until hard and crisp.
