Boil the mince in 2 cups f water with 1 peeled garlic clove and the cinnamon or bay leaves, for 10 minutes. Strain away the water. This gets rid of the odour of the mince.
Finely chop the remaining garlic cloves.
Heat some oil in a pot and fry the onions until golden brown. Add the cinnamon, cloves, cardamoms, garlic, ginger and chillies. Cook for 2 minutes then add the mince and saute for 5 minutes. Add the turmeric, cumin and half the garam masala and saute for a further 5 minutes. Add the tomatoes and salt to taste.
When the tomato is totally absorbed stir fry for 2 minutes. Add 2 cups of water and cook until tender. When done add the coriander leaves and remaining garam masala. Stir well and cook for 3 minutes uncovered.
Quite a dry dish with very little sauce.
Serve with rice or chapati.
