- 12 Large red chillis
- 2 tbsp White wine vinegar
- 2 tbsp Grated palm sugar or brown sugar
- 4 Cloves Garlic

Description
Sweet chilli dip that also gives a kick to stirfrys. As the Agent of a photographers agency, I make this when I get the photographers together to get their thought juices flowing!

1. Roughly chop the chilli's and pop in a saucepan. If you leave the pith and seeds in it will be hotter so add or remove depending on your taste.
2. Add the vinegar and the roughy chopped garlic.
3. Bring to the boil.
4. Blitz the chilli mixture in a food processor until fairly smooth.
5. Put the chilli mixture back in the pan.
6. Add the sugar.
7. You can also add flavours such as pomegramate sauce or chopped coriander or ginger - be creative!
8. Keep stirring until the mixture thickens.
9. Leave to cool and then bottle - I use a recycled old pickled onion jar.
10. Store in the fridge and serve cold with some prawn crackers.
Dips are a great favorite of ours at lunch time and this looks simple and tasty I'll make next week.
