Ingredients
- 750g Butternut Squash peeled and cubed
- 2 medium onion chopped
- 2 red pepper. deseeded and chopped into chunks
- 150g Spinach leaves. chopped
- 75g butter or margarine
- to taste salt and pepper
- 8 cherry tomato. cut into quarters
- 6 Sage leaves
- 1 glass White wine
- 1.2 litres vegetable stock
- 2 tablespoons Parmesan or Pecorino Cheese. Finely grated
- 1 garlic cloves. crushed

This makes a brightly coloured and tasty meal - red, orange and green.. hence the Traffic Light Risotto..
1. Cut the squash or pumpkin into chunks approx 1cm cubed and discard seeds and skin
2. Fry the onion in butter until transparent then add the red pepper, garlic and squash or pumpkin
3. Add the rice and stir until grains are coated in butter then add the wine (if using) or a cup of stock and stir.
4. Add the fresh herbs and seasoning, simmer until the wine (or stock) has evaporated
5. Add 2 ladlefuls of stock and simmer until the liquid has evaporated again
6. Continue adding 2 ladlefuls of stock and evaporating until the rice is tender but al dente
7. Add a further ladle of stock, the chopped spinach and quartered cherry tomatoes and simmer for a further 2 minutes
8. Garnish with parmesan if desired
