This beautiful rose wine is made entirely from Cabernet Sauvignon grapes, fruit driven, refreshing with abundance of berry flavours and a pleasant long finish.

Method

    In a pan, spray with fry light olive oil spray and fry onion, garlic and ginger for 2-3 minutes to soften.

    Add peppers, spinach and rice (if you are using) and fry for a further 2-3 minutes.

    Add wine to the pan and turn up heat to reduce the volume of liquid. Once liquid has reduced by at least half, remove from heat.

    Wash fish fillets and place on a microwaveable plate. Spread half of the vegetable mixture onto the flesh side of each of the fish fillets. Top with 3 slices of lemon on each.

    Cover with cling film and microwave on full power for 4 minutes.

    Serve.

Chef's Tips

I dont always use rice if I want to serve the fish with a jacket potatoe or wedge chips.

Im experimenting using the same topping and recipe on other fish fillets. Cod does not work as well, so I think the type of fish needs to be robust.
