- 400g broccoli florets
- 1 onion, chopped
- 200g cherry tomatoes, halved
- 200g frozen peas
- 3 large eggs
- 200g plain yoghurt
- 1 tbsp. parsley, chopped
- 200g cheddar cheese, grated
- for frying oil
- to taste salt and pepper

1. Preheat the oven to 200C.
2. Cooked the potatoes and broccoli in boiling water then drain and set aside.
3. Stir-fry the onion on the oil than add the broccoli, tomatoes and peas and cook for a further 1-2 minutes. Stir in the potatoes and transfer to an ovenproof dish.
4. Whisk the eggs with the plain yoghurt and garlic until smooth. Add the parsley and season to taste. Pour over the vegetables, sprinkle the cheese on top and bake for 30-35 minutes.
