- 225g Spinach leaves
- 200g Quark
- 200g Cottage Cheese Low Fat
- 2 garlic cloves
- Β½ zest of lemon
- 6 tablespoon Fresh Basil Leaves
- 1 egg yolk
- Seasoning
- 12 Cannelloni Tubes
- 500g passata
- 1 tablespoon parmesan cheese. grated

I found this recipe by wondering how to use a pot of quark up, I really enjoyed it, and I even have some left over for my pack lunch tomorrow!
Method

1. Preheat oven to 200c/400f/Gas 6
2. Blanch spinach in boiling water for 30 seconds, drain and place in a bowl
3. Mix together the quark and cottage cheese
4. Crush 1 garlic clove and stir into mixture with the lemon zest and 1/2 the basil,and the egg yolk. Add the mixture to the spinach, season to taste and combine. Spoon mixture into tubes and place in an oven-proof dish.
5. Crush the remaining garlic and mix with the passata and the rest of the basil, season to taste. Pour over the pasta, sprinkle with the parmesan and bake for 30-40mins until bubbling.
Chef's Tips
The orignal recipe said use zest of one lemon but I found this quite over powered everything so I cut the lemon zest down and it was nicer.
