Ingredients
- 4 tbsp cornflour
- Β½ tsp ground ginger
- 1Β½lb Haddock Fillet Skinned
- 3tbsp Peanut oil
- 1 inch Root ginger (grated)
- 1 leeks. finely sliced
- 1tbsp white wine vinegar
- 2tbsp Chinese rice wine or dry sherry
- 3 tbsp dark soy sauce
- 1 tsp caster sugar
- 2 tbsp lemon juice

I found this in a book that I found in a charity shop. I tried it today and it is one to share.

1. Mix the cornflour and ground ginger in a bowl
2. Add the cubes of fish in batches to the cornflour mixture,turning to coat well.
3. Heat the peanut oil in a wok, swirling the oil around until it is really hot.
4. Add the grated ginger and sliced leek and stir fry for 1 minute.
5. Add the coated fish to the wok and cook for 5 minutes until browned stirring to prevent sticking.
6. Add the remaining ingredients and cook over a low heat 3 or 4 minutes serve immediately.
