Morocann Chicken with Apricots, Rosemary & Ginger

Ingredients
- 8 chicken portions, thighs & drumsticks
- 1 red onion, finely chopped
- 12 dried apricots, halved
- 1 tbsp oil
- 1 knob butter
- 3 sprigs rosemary, one finely chopped, the other 2 halved
- 1 ½ piece fresh ginger root. peeled and finely chopped
- 1 Red Chilli. deseeded and finely chopped
- 1 Cinnamon stick
- 2 tbsp clear honey
- 1 x 14oz tin chopped tomatoes
- salt and pepper

Another yummy Moroccan dish, packed with deep flavours and absolutely worth a try!

1. Heat the oil and butter in a tagine or heave based casserole dish or heavy frying pan. Stir in the onion, chopped rosemary, giner and chillies and saute until the onion begins to soften.
2. Stir in the halved rosemary sprigs and the cinnamon stick. Add the chicken and brown on both sides.
3. Toss in the apricots, honey, tinned tomatoes and add a little water if necessary. Bring to the boil, reduce the heat and cover. Cook gently for about 45 mins.
4. Remove cover and simmer to reduce the liquid to a rich sauce. Season with salt & pepper.
Chef's Tips
I served this with the moroccan meatballs a buttered carrots, rice and couscous. Fab combination!!

Yes, it should read 1 1/2" (inches) of ginger and yes it should read ginger and not giner.My only defence is that I am an extremely busy woman, constantly multi tasking with an ill sister and a very demanding job.MyDish is one of my escapes; unfortunately, I am not able to come onto the site as often as I would like to lessen my stress levels.Anyway, I hope you enjob my recipes, I will continue to add new ones when I can.JB
I suspect that it perhaps should read 1½" (inches)of ginger but that is only a guess. I cannot understand why people do not check what they have written before uploading it! There is a spelling error in the Method also where it says giner when I assume it should read ginger!
Hi, Can you please clarify exactly what you mean by 11/2 pieces of fresh ginger as the bits you get in the supermarket are quite large
