Description

This fudge has a wonderful smooth texture, and tastes great! I've never had any negative feedback after making it for people.

Method

    Line a baking tray (approximately 30cm x 20cm x 2.5cm) with cling film.

    Break up the chocolate and cut the butter into small pieces, then add them to a saucepan along with the condensed milk. Heat gently until everything has melted together, making sure there are no lumps. Don't let the mixture boil.

    Once everything has melted, add the vanilla extract/essence and stir in.

    When the mixture starts sliding off the edges of the pan, remove it from the heat and pour into the baking tray.
    Depending on the timescale you wish to use, you can cool the mix either in the fridge or freezer. Leave in the fridge for 2 hours+, or in the freezer for 30-60 minutes. I find the freezer is more effective. In either case, leave it until it is completely firm.

    When it has cooled completely, remove the fudge from the backing tray and peel off the cling film. All that remains now is to cut it into pieces and enjoy.

Chef's Tips

I've found that cling film is the best thing to use to line the tray. It is much more effective than baking parchment and rarely gets stuck to the fudge. It doesn't need greasing either.

My favourite chocolate to use for this recipe is Scotbloc Plain Chocolate Flavoured Cake Covering, it gives the best taste and texture. In my opinion.

You may want to add the butter to the pan first, and start heating it, as the most common problem I've had is small lumps of butter in the chocolate. They don't always melt before the mixture starts to burn.
