Ingredients

4 skinless chicken breast
5cm/2in. piece root ginger. finely chopped
2 lime rind
4 fresh lime juice
1 Clove garlic crushed
3 tbsps coriander. finely chopped
olive oil
sea salt

Description

A great dish suitable for all the family. It is a mix of ginger and lime creating a great dish. Note: It does not contain sherbet

Method

1
1. Flatten the chicken
2. Mix the Ginger, Lime rind and juice, garlic, coriander and a glug of olive oil. Save half for a dressing.
3. Marinade other half in chicken for 30mins.
4. Cook Chicken in a lightly oiled griddle pan.
5. Serve chicken add a bit more oil to the reserved dressing and pour on top.
