Ingredients
- 4tbsp vegetable oil
- 900g stewing beef, cut into 3cm cubes
- 2 large onions, finely sliced
- thumb sized piece root ginger, peeled and grated
- 3 cloves garlic, chopped
- 1tsp garam masala
- Β½x283g jar pataks rogan josh curry paste
- 1tbsp tomato puree
- 750ml hot beef stock
- 500g sweet potato, peeled and cut into 2cm cubes
- small bunch of fresh coriander, chopped
- red onion, finely sliced for garnish

1. heat 1tbsp oil in a large pan and fry beef in batches using 3tbsp oil in total, until golden. take out and set aside.
2. add 1tbsp oil and onion and fry gently for 5mins until slightly browned. add ginger, garlic, garam masala, curry paste and tomato puree. fry for 1min.
3. return the browned beef, to the pan, add stock, season, and simmer for 1hr.
4. stir in sweet potato and cook for 30mins or until the beef is really tender. add more stock if the pan is too dry. add coriander and serve with red onion.
