Description

This baked cheesecake is a traditional Romanian recipe for a special occasion or family get together. This would always be on the table at Christmas! Worth the effort

Method

  1. 1

    1. To make the pastry, Mix flour, salt & icing/vanilla sugar together in a large bowl. Rub cubed butter in until resemble course breadcrumbs. Make a well in the centre.
    2. Pour the egg, lemon juice & water into the well and stir in until forms a dough. Turn out onto floured board and knead until smooth. Make into a ball and wrap in clingfilm. Refridgerate for 30 mins.
    3. Grease and line a large spring release cake tin. When the pastry is cooled, roll out to a circle and press into the cake tin base - slightly up the sides to allow for shrinkage.
    4. Preheat the oven to gas 4. For the cheesecake filling,Mix together the sugar,lemon zest and juice and the cornflour. Using a electric whisk or cake mixer beat in the cream cheese until smooth.
    5. Add the eggs, 1 at a time. Add vanilla then the cream and beat until smooth.
    6. Add the spices and sultanas. Pour over the pastry in the cake tin.
    7. Bake at gas 4 for approx 50 mins to an hour until firm.
    Turn off oven and leave the cheesecake in the oven until completely cooled.
    8. When the cheesecake is cooled remove it from oven and leave in the tin. Make the plum topping, Halve and stone the plums. Place them in pan with with a little water add the sugar and bring to the boil. Simmer for approx 20 mins on a low heat.
    9. Remove the plums and peel the skins off. Add the arrowroot and brandy to the remaining juice in the pan and simmer until thickened to the consistency of jam.
    10. Arrange the slightly cooled plums onto the top of the cheesecake. When the jam has cooled pour it over the plums
    and cheesecake.
    11. Place the cheesecake in the fridge to set for at least an hour.
    12. Remove from fridge- Run a knife around the side of the tin and remove the cheesecake from the tin onto a plate or cake stand and serve.
    A dollop of whipped cream goes well with this. Craciun fericit & An Nou Fericit!
