Ingredients
- 375 grams digestive biscuits
- 125 grams butter
- 1 lime jelly
- 1 packet dream topping
- 5 ozs double cream
- 8 ozs philidelphia cheese
- 1 tin strawberries

make biscuit base by melting the butter and adding the crushed biscuits, flatten out into a cake tin.
Make jelly to 1/2 pint (can use strawberry juice) allow to cool slightly
Whip cream until it peaks
Mix philidelphia cheese until soft
Make up dream topping as per instructions on packet
Add all the above together and mix well
Drain tin of strawberries and add to the mixture
Turn out onto biscuit base and put in fridge to set
Decorate with some of the strawberries or use fresh strawberries.
This recipe is a favourite of my son, Robert, who always wants the biscuit base as I occassionally just do the cheesecake and turn it out into glasses
This recipe can be varied using other fruit but always keep the jelly a lime one.
I have also used the basic recipt minus fruit adding home made fudge and Baileys Irish Cream.
