Ingredients
- 2 cups self raising flour
- ΒΌ cup cut into pieces
- ΒΌ cup sunflower or vegetable oil
- 2 eggs
- 1 cup Honey
- 1 tsp vanilla or almond essence
- ΒΌ cup chopped dried fruit (or nuts if preferred)
- 2-3 mashed bananas

Rub the butter into the flour.
Mix the wet ingredients together and pour into the dry ingredients, stirring all the
time.
Mash the bananas and add them to the batter, mixing them in well
(don't leave lumps otherwise they will sink to the bottom when you cook
the cake).
Grease and flour a loaf tin and pour in the batter.
Bake at 180 C (gas mark 4) for approx 1 hour, or until the cake tests done (i.e test it by
sticking a knife in - if the blade comes out clean, the cake is ready - if sticky, give it a little longer).
Check after 30 mins - if the top starts browning too quickly, cover with a piece of grease-proof paper to prevent burning.
Chef's Tips
Use wholemeal flour if you feel healthy...you will need to use a raising agent (baking powder) though.
