Ingredients
- 3 tbsp sunflower oil
- 350g boneless chicken cut into thin strips
- 1 onion
- 1 clove garlic crushed
- 1 red pepper deseeded and sliced
- 75g mangetout
- 4 tbsp light soy sauce
- 4 tbsp sherry
- 1 tbsp tomato puree
- 1 Finely grated rind and juice of orange
- 1 tsp cornflour
- 2 oranges
- 100g beansprouts

1.Heat the oil in a large preheated wok. Add the chicken and stir-fry for 2-3 minutes or until sealed on all sides.
2.Add the onion, garlic, pepper and mangetout to the wok. Stir-fry for about 5 minutes, or until the vegetables are tender and the chicken is cooked through.
3.Mix together the soy sauce, sherry, tomato puree, orange rind and cornflour. Add to the wok and cook, stirring until the juices start to thicken.
4.Using a sharp knife, peel and segment the oranges. Add the segments to the mixture in the wok with the bean sprouts and heat through for a further two minutes.
5.Serve at once.
