Ingredients
- 160g Smoke bacon rind removed
- 30g Butter or margarine
- Β½ Celery stick thinly sliced
- ΒΌ Onion. finely chopped
- 1 Garlic clove crushed and peeled
- 2 Peppercorns (crushed)
- ΒΌ Teaspoon thyme dried
- Β½ Teaspoon basil dried
- 1 Bag of baby spinach
- 1 Tablespoon Flour
- 1 Chicken stock cube
- 300ml Water
- 200ml milk
- Salt and pepper to taste

A thickened soup with bacon and wilted spinach

Place the bacon in a microwave for 1 and 1/2 mins to remove some of the liquid, then slice thin and put to one side. In a saucepan melt the butter or margarine on a medium to high heat then add the celery, onion and garlic and cook for 5mins then add the bacon, peppercorns, thyme and basil and cook for a further 4mins. After the 4mins add the spinach and cook for 2mins or until wilted down, now add the flour and mix well then add the stock cube, water and milk, stirring from time to time bring to the boil then turn down and add salt pepper to taste and simmer for 5mins and serve
