- 2/3 skinless chicken breasts
- 1 bunch Mint
- 1 bunch Coriander
- 1 medium red chilli
- 2 garlic cloves
- 1 bunch spring onions
- 1 lemon
- 1 medium courgette
- 1 little gem lettuce
- ยฝ cucumber
- 1 punnet Cress
- 1 small ripe avocado
- 1 bunch basil
- ยฝ tsp English Mustard
- 4 small pitta breads
- to taste red wine vinegar
- to taste olive oil
- to taste Sea Salt and Black Pepper

Preheat grill to max. Put 4 wooden skewers in cold water.
Put mint leaves and coriander into food processor. Halve and deseed chilli and add. Peel garlic cloves and add and add half of trimmed spring onions along with S and P. Grate in lemon zest and add lemon juice. Whiz into a paste
Cut chicken breasts into chunks and add to herb paste with splash olive oil.
Trim courgette and peel into strips. Put in a bowl with a pinch of salt some olive oil and a squeeze of lemon juice.
Load skewers and grill. Put pittas on bottom shelf.
Washes little gem leaves. Slice remaining onion, quarter cucumber and slice then snip cress on top. Add avocado.
Make dressing with red wine vinegar, olive oil and mustard and S and P.
